Creamy Coconut & Sweet Potato Soup

Ingredients: 

  • 500g chicken
  • 800g sweet potato
  • 1 tin coconut milk (full fat)
  • 400ml veg stock
  • 1L chicken stock
  • 1 red onion
  • 3 cloves garlic
  • 1 tsp chilli powder
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1/2 lime juiced

*optional coconut flakes on top (not included in calorie total)
**for lower calories use reduced fat coconut milk (won’t be as creamy)

 

Method : 

 

Launch the chicken into a chicken stock jacuzzi for 12 mins (until cooked through)

Sauté the onion for 2-3 minutes then add in the garlic for 30 seconds before adding the spices.

Mix well and then add in the sweet potato followed by the coconut milk and veg stock.

Simmer for 15 mins (until soft) blitz, shred up chicken, add it in then finish with chilli powder and coconut flakes on top.

*if you prefer a more liquidated soup you can use some of the left over stock from the chicken.
