Chicken Gnocchi Soup

Ingredients: 

  • 600g chicken
  • 400g fresh gnocchi
  • 1 red onion
  • 3 carrots
  • 3 stalks of celery
  • 3 tbsp Italian seasoning
  • 1tbsp of lazy garlic
  • 1L chicken stock (2 stock cubes)
  • 100ml single cream
  • 40g parmesan
  • serve with a crusty roll

Method: 

  • season the whole chicken breasts with 1tbsp of  Italian seasoning and pop into a medium hot pan to fry till soft
  • in a large soup pot combine the chopped onion, carrots and celery
  • add the rest of the Italian seasoning and the garlic puree and stir well
  • fry for 4-5 minutes
  • add in the chicken stock and stir well
  • shred the cooked chicken breasts with 2 forks and add into the soup pot with the single cream
  • pop the gnocchi in as well and cook for another 2 minutes
  • serve with a sprinkle of parmesan and a crusty roll
