Ingredients:
- 500g lean beef steak mince
- 1 onion
- 1tbsp lazy garlic
- 2 sticks of celery
- 4tbsp cajun spice
- 4tbsp tomato puree
- 200g long grain rice
- 800ml beef stock
- 80g chilli cheese mix
- salt & pepper
Method:
- pop the chopped onion into a medium hot pan and add the mince
- break up the mince with a spatula and ensure its browned all over
- stir in the lazy garlic and add the chopped celery
- next sprinkle in the cajun spice and mix well
- stir in the rinsed rice and then tomato puree
- add the beef stock and cook the mixture for 15 to 20 mins
- sprinkle the chilli cheese mix on top and melt that under the grill
