Dirty Cajun Rice

Ingredients: 

  • 500g lean beef steak mince
  • 1 onion
  • 1tbsp lazy garlic
  • 2 sticks of celery
  • 4tbsp cajun spice
  • 4tbsp tomato puree
  • 200g long grain rice
  • 800ml beef stock
  • 80g chilli cheese mix
  • salt & pepper

 

Method: 

  • pop the chopped onion into a medium hot pan and add the mince
  • break up the mince with a spatula and ensure its browned all over
  • stir in the lazy garlic and add the chopped celery
  • next sprinkle in the cajun spice and mix well
  • stir in the rinsed rice and then tomato puree
  • add the beef stock and cook the mixture for 15 to 20 mins
  • sprinkle the chilli cheese mix on top and melt that under the grill
