Mental Lentil Soup Upgrade


Shopping list: 
* 400g chicken 
* 240g red lentils 
* 5 carrots 
* 2L chicken stock (2 stock cubes) 
* 1 large leek
* 1 tsp salt/pepper (season to taste)
* 5 Bacon medallions (cooked and diced)

Serves 5 large bowls
Each serving: 
348 calories 
40g protein 
4g fat 
38g carbs 

Step by step: 

  1. Fry off some bacon then set aside 
  2. Sear the chicken on all sides then add in 1L chicken stock and simmer for 12-15 mins. 
  3. Remove, shred and add back in. 
  4. Add carrots, leek, lentils, salt/pepper, bacon and lentils. 
  5. Simmer for 15 mins then serve with extra bacon on top.
