Ingredients:
- 500g chicken breast
- 260g penne pasta
- 1 tsp garlic powder
- 1tsp paprika
- 4 bacon medallions
- 1 red onion
- 1 heaped tsp lazy garlic
- 150ml chicken stock
- 100g garlic & herb boursin cheese
- 40g reduced fat cheddar cheese
- sprinkle of parsley to finish
Method:
1. Season the chopped chicken with garlic and paprika
2. Fry the bacon medallions alongside the onion, and garlic and fry for a few minutes before adding in the chicken and fry for 8-10 mins till chicken is cooked.
3. Whilst the chicken is cooking get the pasta onto boil.
4. Add in the chicken stock to the chicken alonside the boursin cheese, and cheddar cheese. Mix well.
5. Drain the pasta then mix into the cheesy chicken sauce.
6. Serve with a sprinkle of parsley.
Storage :
Can be Refrigerated or Frozen
1. After cooking your batch , do NOT store until it has cooled ot an ambient temperature ( 90mins or so)
2. Food can be stored in the fridge for 2-3 days
3. Ensure your fridge is set to 2 degrees
4.Food can be stored in the freezer for 2 weeks.
5. After its been frozen, its good practice to allow your food to defrost overnight in the fridge at 2 degrees .
6. Ensure food is piping hot throughout
