Ingredients:
- 500g chicken
- 100g chorizo
- 2 peppers
- 1 red onion
- 2.5Lchicken stock (1 for chicken/1.5 for veg)
- 400g sweet potato (skin on weight)
- 2 carrots
- 2 tbsp curry powder
- 1 tbsp chilli powder
- 4 cloves garlic
- Parsley and chilli powder to garnish
Add the chicken into a pot alongside 1L chicken stock and simmer for 12 minutes before shredding with 2 forks.
To a large soup pot add the chorizo for 2-3 minutes followed by the veg and spices.
Add in the remaining stock and simmer until veg is soft.
Blitz, add shredded chicken and enjoy
