Chicken Fajita Enchiladas

Ingredients: 

600g chicken
2 peppers
1 red onion
2 chillies
Handful jalapeños
1.5 tbsp fajita seasoning
100g soft cheese
Handful diced parsley
100g salsa
4 wraps
80g light cheese (30%)


 

Method: 

To a roasty toasty pan add the onion and chicken then chef for 5-6 minutes before adding the fajita seasoning followed by all the veg.

Stir in the soft cheese, 2 tbsp of salsa and parsley then add to wraps, fold up and place on an ovenproof dish.

Add remaining salsa, sprinkles of cheese and bake or grill until golden.
