Ingredients:
300g mince (5%)
400g potatoes
1/2 pepper
1/2 red onion
1/2 tin chopped tomatoes
1.5 tbsp fajita seasoning
30g grated mozzarella
1 tbsp chicken seasoning (for chips)
Sauce :
2 tbsp light mayo
2 tbsp tomato sauce (reduced sugar)
2 gherkins
1/4 white onion
1 tsp mustard
1 tsp rice wine vinegar
1/2 tsp garlic & 1/2 tsp paprika
Method:
Cover potatoes (chips) in chicken seasoning then airfry at 200 for 20-22mins (depending on the power of your airfryer)
Fry the onion for 2 minutes then brown the mince.
Add pepper and fajita seasoning followed by the chopped tomatoes.
Melt the cheese, make up the sauce and serve!
